Manic Monday

Hi all,

Last week of classes as an undergraduate! It is pretty crazy.

I'm thinking about changing the title of the blog since I'm not really focusing it on losing as much as I was in the beginning. I've had some suggestions for changes.

I forgot to take a picture of my breakfast (egg sandwich with strawberries) or lunch (hummus wrap) today, so I'm going to post the pictures from yesterday.

I slept until 10, so I just ate lunch instead of breakfast. I had a black bean burrito.


I had a side of roasted asparagus as well.


Dinner was a sweet potato with quinoa stuffing and roasted asparagus.


Instead of making the quinoa with water, I made it with vegetable broth. It was delicious.

Right now, I'm trying to decide what to make for dinner. I want to make enough to bring to work tomorrow. I'm thinking baked tofu with broccoli.

Hi all!

I'll post some food pictures later. This week is going to be really busy, so I don't know how often I will blog. I hope once a day!

Right now I'm making quinoa for the first time to eat on top of a baked sweet potato. Yum.

TGIF

Hi all! I'm blogging a little earlier than usual. I had a doctor's appointment, and now I have about 20 minutes until class starts.

My breakfast looks pretty similar to my dinner last night.


No spinach on the sandwich though.

I feel a lot better eating fresh fruit in the morning. I need to remember that.

I packed a few snacks since I'm going to be working on campus and eating a latish dinner with the boyfriend. Today is our "date night." We haven't decided what to do yet.

I'm excited about lunch/my snack though.

Night time snack

Hi all,

I'm watching an episode of Castle and eating my bedtime snack.

I don't usually post it because I forget to take pictures, but I remembered tonight!

Usually it is either dark chocolate pudding or a piece of dark chocolate.

However, I wasn't craving sweets tonight. So I decided to switch it up.


2 pieces of celery with a wedge of laughing cow light swiss!

Earth Day!

What do you do to help the earth?

I spent most of the afternoon sleeping so no electricity. Does that count?

I knew it was going to be a busy day at work, and I wasn't sure how long I would have for lunch so I started out with a pretty calorie dense breakfast.


Overnight oats. Topping with Almond Butter, Kashi Go lean, blueberries.

It kept me pretty full for a while. I did manage to get a very, very quick lunch between school groups, so I made a frozen dinner.

It doesn't look that appealing, but it was pretty tasty.


Sweet n sour "chicken" from morningstar farms. This had carrots, peppers, pineapple, and brown rice.

I had an unpictured strawberry shortcake for Administrative Professional's Day. They brought it in for some of the workers.

I took a nap with this guy after work.


I named him Phantom. I don't know if I ever made an announcement here! He has a total Phantom of the Opera mask, and he is super sweet.

Since I had fake meat for lunch, I knew I didn't want to have it for dinner. I was dreaming of eggs (seriously) during my nap, so made an egg sandwich. I wanted more veggies today, so I cooked some spinach with evoo to add on top.


Trader Joe's had fresh berries, and the blackberries were AWESOME. I'm so excited. I love berries.

This weekend is the Earth Day celebration in Forest Park, and the Tower Grove Farmer's Market is there. I think I might check it out on Thursday.

Fewer Meat Subs Experiment

I am so uncreative with titles for my blog posts. I should get better with that.

After my last post, I went to my first WW meeting in like a month or so. I really liked this leader. I want to keep going to her, so I'm going to figure out how to swing that with my schedule.

On my way back I stopped by trader joe's to pick up some fun, protein packed meal ideas.

I decided to replicate what I get from Chipotle, a burrito bowl.

I was super excited to find this at Trader Joe's


I don't like tomatoes (weird, I know), so I love Chipotle's corn salsa. This helped my laziness.

Here is my taco salad!


I used baby argula, black beans, a tsp of the corn salsa, fat free plain greek yogurt, and guacamola.

Excellent dinner for about half the points as Chipotle.

I am eating some hummus with whole wheat pita now!

It is going to be a long day tomorrow with a lot of kids at the museum, so I made a protein packed over night oats. I think I'll ad almond butter and fruit to it in the morning.

Wednesday

I started my morning out with a breakfast cookie.


I found the recipe on Fitnessita's blog.

I used Dark Chocolate Dream and chocolate protein powder. It was delicious.

Lunch today was a random fake chicken bbq sandwich with swiss cheese and a bagel thin.


It was good. The brussel sprouts were kind of gross, so I threw them out and made broccoli instead.

I'm about to go for a run, go to a WW meeting, and finally I'm going to trader joes.

I noticed I eat a lot of meat substitutes, so I'm going to try and eat less of them throughout the week.

Weekend

Hi all! Sorry I haven't posted in a few days.

Saturday the boyfriend and I ended up going on a long bike ride.


Here we are half way through the ride.

The boyfriend bought me this jersey for our 3 year anniversary.


I think it is pretty awesome.


Garmin time.

I started out this morning with my usual overnight oats.

I need to buy some more egg whites so I can start eating them again too!


Overnight oats with cinnamon harvest cereal and cinnamon.

I might make a breakfast cookie for tomorrow.

Dinner I had a black bean burger with sweet potatoes on campus.


Now I'm watching Glee. I love this show.

Saturday

Hope everyone is having a good Saturday!

Yesterday I stayed on campus and did homework until about 7. I went home and changed for a date with the boyfriend.

During the day I had an egg sandwich and a salad. Kind of boring so I'm not going to post the pictures.

We were going to go to a sushi place that I had a groupon for, but we were running late. We went to Stir Crazy instead.

Stir Crazy is probably my favorite chain restaurant. I love the market bar and making my own stir fry.

We started out with a side of edamame.




Yum. Love edamame.

I also had a mojito.




Also delicious.

For my main course I had the market bar create your own stir fry with tofu and flat rice noodles.




I get the classic chinese sauce.

For dessert the boyfriend and I shared the banana wontons.




Delicious. It was awesome.

We went to see Kick Ass afterwards. It was excellent. Really really good.

We snuck in some candy to the movie.




We also had some sour candy that I didn't snap a picture of. We didn't eat all of it because we were still pretty full.

This morning we headed to St. Louis Bread Co for breakfast (panera for all you non-St. Louis readers).

I had an egg and cheese sandwich. It was so good.




The boyfriend ate this.




He is 6' and weighs 140 pounds. He can eat anything.

I think we might go on a bike ride thsi afternoon. He is at work now, but when he is done.

DInner from Wednesday and Date Night Thursday

Dinner last night was during Criminal Minds/American Idol.

I love Criminal Minds. Seriously my favorite show.

I had a shit ton of points leftover, so I made something pretty point heavy.




Kale with asiago cheese and olive oil and whole wheat pasta with the same. IT was delicious.

For breakfast I had a bowl of overnight oats. I wasn't feeling well, so I woke up really late.

I'm about to eat dinner. TOnight I'm seeing Date Night! I'm excited.

Working Wednesdays

I'm back at the library. The end of the semester crunch time is upon us, so I'm starting to work here again. I haven't spent any serious time here since I turned in my thesis.

First the food and at the end I have some exciting news.

I started off the morning with overnight oats. This time with new toppings!



Topped with a tablespoon of Dark Chocolate Dreams and a handful of Cinnamon Harvest Kashi. I really wanted the crunch to go with it. Very delicious.

I had a late lunch.




This is my version of a bacon cheeseburger (I didn't come up with it). Morningstar Farms veggie bacon, a boca burger, and laughing cow on a bagel thin. Side of broccoli.

Yum.

I wanted a snack before heading to the library. I decided to try this Green super food I had picked up at whole foods.



Chocolate flavor.

I mixed it with a frozen banana, almond milk, and spinach.




It tasted too grassy for me. I decided to use this and mix it with cherries and a WW chocolate smoothie mix. It tasted much better.

I'll just have to add the regular to my normal smoothie from now on.

SO, my exciting news.

I think I'm going to sign up for the Rock n Roll Chicago Half Marathon in August. My dad is going to run it with me. I'm going to wait until May to sign up, so I can see how training is going.

I'm really excited!!!

Hi all

No pictures today. I'm feeling lazy.

I forgot to weigh in this morning!! UGH!

I'm working on a research paper now. Due in a few weeks. We finally received our thesis grades back. I'm not thrilled with mine, but I'm still graduating with honors so yay!

I started off my morning with a quick fiberful bar. I forgot to make anything else and I was running late for work.

For lunch I had a cup of asparagus soup at work.

I had a snack of frozen yogurt after being slightly disappointed in my grade.

Finally for dinner I had a black bean burger with fries and green beans. Yum.

Wow

I kind of stink at updating every day!!!

This weekend I was in Kansas City meeting up with other WW friends. It was awesome. I wish KC and St. Louis were closer.

I "ran" a 5k with Megan and Colleen. We cheered for another Megan and Julia at teh end of the half and got brunch together. We ate a lot. It was good to eat with other WW people!

I'll post pictures soon. For now I'm tired.

The St. Louis Marathon was also this weekend. Between seeing it and Julia and Megan run their half I think I'm inspired to sign up for one. I'm going to think some more about it and research it before I do though!

Wednesday

First off hi new followers!!

I'm at a film screening right now. We co-sponsored an event with another group AND we have an event tomorrow. We have a lot of money to spend.

I started out my day with the overnight oats I made last night.




This time I had added frozen cherries to it. It was awesome. I added a little agave nectar.

Before class I had a green smoothie.




This was a chocolate WW smoothie mix with frozen cherries, half a banana, almond breeze, and spinach. I think the chocolate smoothie mix might be too overpowering for other fruit flavors. I'll have to try the vanilla flavor of random protein mixes I bought from whole foods.

During my class break I had green beans at the place on campus.



They were pretty good. Kind of oily though.

I wasn't that hungry right when I was done with class but I knew I needed to eat.

I bought this at whole foods last night and decided to try it.




I love things I can make in the microwave.

I ate this on a bagel thin with kale! Yay I'm glad I have kale again.




I wanted some chocolate, so I had half of this. Also a whole foods purchase.




It was pretty good. Half of it was all I needed.

I forgot to take a picture of my dinner. I had a black bean burger with swiss! Also delicious.

Screening over! I can go home. Yay!

Tuesday! WI day and other fun adventures

I started out my day with the overnight oats I put together last night.




Last night I added

1/2 cup of oats
a little less than 1/2 cup of vanilla greek yogurt
a little less than 1/2 cup unsweetened vanilla almond breeze

I put that in a tupperware container so I could grab it tomorrow. Left it in the fridge overnight. In the morning I sliced up a banana and added it to it. I also added a ton of cinnamon after I took this picture.

This was awesome!! The greek yogurt added protein and it kept me much fuller than normal oats. I just ate it cold.

Tonight I made a bowl and added frozen cherries to it. I figured this would give the cherries time to defrost.

I didn't bring in a lunch today since we didn't have a tour in the afternoon. I figured I'd indulge in the cafe upstairs.

My boss (who still hasn't been able to find my blog) had extra of something she had made in the fridge and offered it to me. She is an awesome cook and vegetarian, so I always take her food when she gives it!!




This was lasagna made with rice noodles, tofu, goat's milk, zucchini and a fire-roasted tomato sauce. It was delicious.

I did have a cookie from the cafe upstairs.




Yum.

Tonight I went out for thai food with the boy. My friend who I usually have a friend date with was out of town for a grad school interview.




Pad Peanut Sauce with tofu. I ate about half the rice and half the sauce but all of the veggies and most of the tofu.

Afterwards I had a fun trip to whole foods. I bought a new apple pear thing to try. I also bought quinoa and polenta for the first time. I've eaten them before, but I've never tried to cook them!!

I also bought some random samples of protein powder to add to smoothies.

Easter weekend take 2

So I went home for the weekend!

On Saturday we went into the city to see a couple of plays. It was a lot of fun.

My parent's house wasn't that greatly stocked with food, so I had to make do.



Toast with smart balance peanut butter.

Once we got into the city we ate at the food court in the basement of Marshall Fields. I refuse to call it Macys.



Spinach and cheese lasagna with broccoli and carrots. They gave me SO MUCH lasagna. i only ate like 1/3 of what they gave me.

Next it was onto the play!



Billy Elliot was fabulous. It was so so so good. If you get a chance, see it!!

My grandpa had paid for the suite service before hand.

I had a class of sparkling rose wine.




It was so pretty and delicious.

I had some dessert in intermission.




Blueberry dessert.

For dinner we went to Weber Grill.




Grilled caribbean tilapia with a salad and a side of asparagus.

So delicious.

I also indulged in dessert.



Apple pie and cinnamon ice cream.

Finally we saw beauty and the beast. Also excellent.

Today

Hi All!!

I'll blog about the weekend in a minute. I had some good food. I wanted to go ahead and blog about today though.

I started out my day with a breakfast sandwich.



I'm going to try overnight oats tomorrow morning. I'll assemble them tonight.

I had a crappy meeting with my advisor today, so I was upset. I went to whole foods and got the hot bar.

I did okay. I started with a salad.



Mixed greens with cauliflower, quinoa, cranberries, and tofu.

I alo had the hot bar food.




Didn't do too hot here. Ziti with potatoes and rice. I didn't eat the rice. I ate the ziti and potatoes though.

I should get my emotional eating under control. I feel like I wasn't this bad before WW. A friend was talking about how she felt the need to indulge now, and I agree totally.

I'm running low on groceries, and I didn't want to go out.

So I used what I had.



Sweet potato with some butter sub and cinnamon. Bagel thin with laughing cow.
