Today

Hi All!!

I'll blog about the weekend in a minute. I had some good food. I wanted to go ahead and blog about today though.

I started out my day with a breakfast sandwich.



I'm going to try overnight oats tomorrow morning. I'll assemble them tonight.

I had a crappy meeting with my advisor today, so I was upset. I went to whole foods and got the hot bar.

I did okay. I started with a salad.



Mixed greens with cauliflower, quinoa, cranberries, and tofu.

I alo had the hot bar food.




Didn't do too hot here. Ziti with potatoes and rice. I didn't eat the rice. I ate the ziti and potatoes though.

I should get my emotional eating under control. I feel like I wasn't this bad before WW. A friend was talking about how she felt the need to indulge now, and I agree totally.

I'm running low on groceries, and I didn't want to go out.

So I used what I had.



Sweet potato with some butter sub and cinnamon. Bagel thin with laughing cow.

Easter weekend

So, I have lots of food to update on. I have pictures of all of my meals, but I've been forgetting to update while at the computer.

I'm tired now, so I think I'll run through it without pictures for now. Add pictures later.

Wednesday night I had spent the day looking and beautiful food blogs, so I wanted something tasty and indulgent, but low points. I had whole wheat pasta with a wedge of laughing cow melted with evoo.

For dessert I had strawberries dipped in low fat dark chocolate pudding. New favorite dessert!!

On Thursday I ate a Greek yogurt for breakfast. I like greek yogurt because it has so much protein! It keeps me super full. I tried the honey vanilla flavor from yoplait. It was okay. I'll probably stick to plain vanilla though.

Lunch I had an awesome flatbread from the express place at work. It is fontina with truffle, mushrooms, and shallots. So tasty. And fairly cheap.

Dinner I had a last minute invite to go out to dinner with a friend to the sit down place on campus. The proceeds were going to charity, and I could use my meal points! Win, win.

I had rainbow trout with butternut squash risotto and broccoli. I shared with my friend so I tried her polenta. Yum.

I also shared dessert. Bananas fosters brownie. Also awesome.

I went home for easter today. I had my usual breakfast sandwich before class. Chipotle for lunch (I wanted mexican). The burritto bowl vegetarian is not bad points wise. FInally, subway on the road.

Going into the city tomorrow!

Midterm today

I had a midterm today so I didn't update last night!

It was in my class on American Presidents.

Tuesday's I have a dinner date with a friend.

We usually eat on campus.

Last night the Vegetarian station had vegetarian meatloaf.



Vegetarian meatloaf with green beans and roasted potatoes.

Afterwards we walked to get gelato.



Chocolate and toasted almond gelato.

I needed a power breakfast before my exam.

So, bagel thin with egg whites, veg bacon, and swiss it is!



The midterm was fine.

When I returned, I decided to make one of my favorite easy recipes.

Foil pack with tilapia and aspargus. It is a hungry girl recipe. Meet the cast of characters.



Tilapia, parsley, butter, garlic, asparagus, lemon

8 asparagus, 1 tsp of butter, 1/2 tsp of garlic, 1/2 tsp of parsley, 1/8 tsp of salt.

Put in a foil packet and bake for 20 minutes at 375.

I was hungry before it was done, so I made some kale.



This was the last of the kale. I'll have to get some more.

Finished fish product!



Now I'm trying to decide what to have for a snack.

I should have a green smoothie. I don't know if I really want it.

Breakfast and Lunch

Today is usually a relatively high point day.

I WI on Tuesdays so my points restart.

For breakfast I had the new usual.



It was egg and cheese on a bagel thin.

We didn't have any tours this afternoon so a few of us went out for lunch.



I talked about my food blog, so my boss might be following me now. Hi!

I had this delicious crepe



It is a crepe with brie and roasted apples.

Yum.

I might have a green smoothie later. I'm not sure. I'm hungry and need a snack.

Dinner

I'm currently at a film screening of the Best Picture winner The Hurt Locker. I'm co-president of a student group on campus. My other co-president is training to take over when I graduate in May. AHHHH.

I was still hungry after lunch. I think it is because it is my first day back 100% OP in a while.

I had a very filling dinner though and feel much better.



Boca burger with swiss and avocado on a bagel thin. Kale sauteed with tsp of evoo and a clove of garlic.

I love kale. Yum. I could eat it all the time. I also love garlic. I eat a lot of it. Delicious.

The avocado was a new purchase from the grocery store. I've never tried avocado before. I smashed it up with some salt and pepper and spread it on the burger.



It was delicious. I liked the flavor. I still have a few more avocados to use (they were four for five dollars so DBF bought four).

I knew I would need a snack for the screening. The co-president brought candy, so I wanted something to resist it.



Tada! Green smoothie.

I made mine with WW chocolate smoothie mix, 1 cup of unsweetened vanilla almond breeze, 1 cup of spinach, and a frozen banana.

Delicious. You don't taste the spinach at all. The first time I made this, I didn't blend it enough so it still had chunks of spinach.

I brought a banana with me too.

Back to the screening and homework!

Lunch

Yesterday at the grocery store I bought whipped peanut butter.



I like making peanut sauce, and I thought this would be easier to work with.

It was.

This was really delicious. I promise. It looks gross.

Breakfast today!

Now that I have turned in the thesis, I'm going to TRY to blog what I eat every day! I really am.

I have class at 11 on Monday-Wednesday, so I have more of a leisurely morning. What really ends up happening is I stay up late (last night studying/watching 30 rock) and I end up rushing anyway.

Yesterday at the grocery store, I finally remembered to buy bagel thins!



I also bought a lot more fun stuff, which you will be seeing throughout the week.

Lately, I've been really craving eggs. I know protein keeps me fuller int he mornings, so I try to eat it instead of oats for the most part.

This morning, I made a breakfast sandwich with the bagel thins.



Everything bagel thin, two egg whites, morningstar farm veggie bacon, jarlsburg light swiss cheese.

So delicious. Also super filling and low points!

I also had an iced sugar free chai with soy milk.

I forgot to take a picture of it. It was my snack in between my two classes. I have an awkward hour long break where I usually end up talking to my friends. Today I played with a puppy at the boyfriend's place of employment.

I'm in class right now actually. We are talking about race in cultural anthro. I have worked on an exhibit about race for three months. There really isn't anything I didn't now already.

I'm eating lunch after class. Haven't decided what to eat yet.
